eggs simmered in Serena's basic tomato sauce

Quick Breakfast - Eggs Simmered in Tomato Sauce

Since it's January, and like most people, I'm attempting to clean up my act a bit, I have been trying to eat healthy breakfasts.  Helps me start my day on the right foot and all that.  

Today I used some of Serena's basic tomato sauce to simmer some eggs.  Just heat the sauce in a small skillet, gently drop an egg (or four) on top, and simmer for about 5 minutes, covered.  You'll know it's done when the egg whites have changed from clear to white.  

I also stirred some halved cherry tomatoes into the sauce, and topped it with the tiny little basil leaves that seem to have no use, other than to make my breakfast look charming.  

Mop it all up with a slice of whole grain toast, no butter required!
